Did you know rolled oats are an excellent source of soluble fibre, particularly beta-glucan? This powerful fibre is known for its ability to lower LDL (bad) cholesterol, improve blood sugar control, and promote longer-lasting fullness. All of this makes oats a smart choice for those managing diabetes or looking to maintain a healthy heart.
Pair oats with the natural sweetness of stewed apples, a touch of cinnamon, and some healthy fats from nuts, and you’ve got a wholesome, balanced breakfast the whole family can enjoy.
Ingredients
- ½ cup rolled oats
- ⅔ cup reduced-fat milk
- 1 medium green apple, peeled, cored and chopped
- ½ tablespoon water
- 1 tablespoon pecans (or nut of choice), roughly chopped
- ¼ teaspoon ground cinnamon
- 100g reduced-fat Greek yoghurt
Method
- Place apples and water in a small saucepan over medium-low heat. Bring to the boil, then reduce heat and simmer, covered, for 8–10 minutes or until tender. Set aside.
- In a microwave-safe bowl, combine oats and milk.
- Microwave on HIGH for 2 minutes. Stir, then microwave for another 1 minute.
- Top the cooked oats with stewed apple, chopped pecans, Greek yoghurt, and a sprinkle of cinnamon.
